Restaurant: Impossible (Food Network) opened its first-ever episode at Villari's, a family-owned Italian restaurant in Palmyra, New Jersey that had operated since 1948. By 2011, third-generation owner Paul Villari III was running the business his grandfather had founded, and, as shown in the episode, could no longer draw a salary from it. Robert Irvine found a kitchen he described as disorganized, a dated dining room, and a shrinking, aging customer base the family had struggled to replace with younger diners. The series' format calls for Irvine and a design team to rebuild a struggling independent restaurant's menu, staffing, and decor over roughly 48 hours, ending in a relaunch dinner for the owners and their staff. During the two-day rescue at Villari's, Irvine auditioned outside cooks on camera to select a new executive chef, redesigned the dining room, and cut the restaurant's sprawling menu down to a shorter, more contemporary list of dishes. The episode, which doubled as the Restaurant: Impossible pilot, aired January 19, 2011. According to Phillip Vallari, Paul's brother, in a 2012 interview with The New York Times, the family found the new menu too upscale and too costly for Villari's regular customers, and reverted to the old menu and portions within about two months of filming. The restaurant continued operating under the Villari's name for roughly two more years. Food Network Gossip reported on November 10, 2014 that the space had been rebranded as a sports bar called Jerseys Pub, appearing at the time to remain under the same family's ownership, with an October 2014 Facebook post from the business referencing a change in management. A Tasting Table retrospective published April 4, 2026 reported that Jerseys Pub had closed by around 2015, ending the location's run as a restaurant after roughly 67 years, and that Paul Villari III had since left the restaurant business to work as a realtor. Current Tripadvisor restaurant listings for Palmyra, New Jersey no longer include Villari's, Jerseys Pub, or Villari's Milmarian under any name.
