Baja Cafe was founded in 2014 by Kim Scanlan and Gerard Meurer, according to Tucson Foodie and Tucson.com; Scanlan left a social-work career to open the restaurant with Meurer, a self-taught chef. The Broadway location remains the original of what is now a three-location Tucson-area chain, after Baja Cafe expanded to a North Campbell Avenue location in 2016 and later to West Ina Road, according to Tucson.com.
