What happened after Restaurant: Impossible (Food Network)?

On Restaurant: Impossible (Food Network), Robert Irvine visited Hoffman's Bistro and Patisserie, a bakery-turned-restaurant on Pacific Avenue in downtown Santa Cruz, California, owned by Ed Hoffman, a master baker, and his wife June. According to Santa Cruz Patch's coverage at the time of filming, Ed Hoffman had run the Pacific Avenue location since 2001 and had built the business around European-style baked goods before expanding into full breakfast, lunch, and dinner service with nightly live jazz. Contemporary reporting on the show described a decade-old operation carrying more than $2 million in debt, with financial pressure creating a tense atmosphere for staff and customers alike.

Filming for the two-day, $10,000 renovation took place October 10 and 11, 2011; Irvine's team replaced part of the bakery counter with a wine bar and reworked the menu and dining room before the episode aired January 11, 2012. Patch reported that the last pre-renovation diners were filmed and interviewed the day before the new look debuted, and that Hoffman hoped the changes would help draw a bigger dinner crowd to a restaurant mostly known for breakfast and lunch. According to a Santa Cruz LocalWiki community page, Hoffman's Bistro and Patisserie continued operating at 1102 Pacific Avenue for several more years before closing in January 2018, when the Hoffmans' lease was not renewed.

The Pacific Avenue space was subsequently taken over by a different restaurant operating as Hoffman's Downtown; a Yelp listing for that business is also marked permanently closed, last updated in July 2026, and no source found during this research confirms whether the same family remained involved in that later operation. No indication of a currently operating restaurant at the address was found. Coverage of the renovation also noted that Hoffman had previously operated a bakery counter alongside table service, a combination the show's designers reworked into a wine-bar concept intended to draw evening diners rather than only breakfast and lunch regulars.
