At Mickey's Diner, a vintage railroad-car-style diner in downtown St. Paul, Casey Webb learned the counter staff's fast-paced routine for taking orders, grilling, and mixing malts. He tried the One-Eyed Jack, a grilled ham steak and fried egg sandwich with melted Monterey Jack cheese inside whole-wheat toast with a circular cutout on top, served alongside hash browns and a malt he helped make himself.
