What happened after Bar Rescue?
Paladino's was a decades-old Tarzana music venue, once host to touring acts including a 2007 Foo Fighters show, that two cancer-researcher friends, John and Jonathan, had owned since 2012. By the time Bar Rescue's "Weird Science" episode aired in March 2018, the bar carried more than half a million dollars in debt, had no signature cocktails or draft beer, and its bartenders could not make a Manhattan or an old-fashioned when asked. The single small pizza oven left kitchen wait times near an hour, and bartender Mary was found to be owed back pay even as she took on more of the bar's day-to-day management.
Mixologist Rob Floyd and chef Jason Santos trained the staff on balanced tequila drinks and a color-changing butterfly-pea-flower cocktail, while the owners repaid Mary's back wages. As part of the renovation, Jon Taffer renamed the bar Theory: A Vintage Parlor Bar, adding a stage curtain, new point-of-sale systems, and pizza warmers to speed up food service.
Sales were reported up, including a 30 percent increase in food sales, at the standard six-week follow-up, and reviews from that period praised the new cocktails while some patrons criticized a cover charge that remained in place for weekend dance nights. The owners never fully committed to the new identity: according to a Facebook post from the venue, they continued using the Paladino's name for live-music bookings while calling the space Theory for regular bar service, which led to customer confusion. According to Reality TV Updates, Theory closed in July 2018, roughly a year after Jon Taffer's visit. The owners went on to be associated with a bar called Petie's Place, according to the venue's old Facebook page, and a later reader comment on Reality TV Updates reported that Petie's Place has also since closed. By 2022, the original Tarzana address was occupied by an unrelated business, VLounge Bar & Night Club.
