What happened after Best Thing I Ever Ate?

RM Seafood was chef Rick Moonen's sustainable-seafood restaurant at the Shoppes at Mandalay Place, built around responsibly sourced fish and shellfish rather than a standard steakhouse-and-seafood Strip menu. Moonen, a longtime advocate for sustainable fishing practices, opened the restaurant along with an adjoining bar, Rx Boiler Room, at the Mandalay Bay-connected retail corridor. According to a Casino.org Vital Vegas report published November 12, 2018, both RM Seafood and Rx Boiler Room closed with little advance notice that month after Moonen and Mandalay Bay management could not agree on new lease terms.

The same report said Moonen intended to return to Las Vegas dining away from the Strip, without giving a specific location or date. No 2026-dated source was located describing what currently occupies the former RM Seafood space at 3950 South Las Vegas Boulevard, and no later report confirming an off-Strip reopening under the RM Seafood name was found.
