What happened after Best Thing I Ever Ate?

The Happy Lobster Truck built its business around Maine lobster rolls and a lobster grilled cheese served from a mobile kitchen. Three friends, Alex Robinson, Neal Bassett, and Tyler Cullitan, started the truck in 2015 after Robinson, whose family worked in the seafood trade, noticed Chicago had little casual lobster on offer, according to the Daily Northwestern. The truck sources lobster shipped in within days of being caught, per the same profile. The operation has since grown to two trucks plus a brick-and-mortar counter in Washington Hall in Downtown Chicago, offering lunch, dinner, catering, delivery, and private events, according to a Yelp listing for the Washington Street address updated in September 2026. That listing also notes the truck shuts down seasonally from Thanksgiving through the end of February. A current schedule of truck stops is posted on the company's own site, happylobstertruck.com.
