What happened after Best Thing I Ever Ate?
Corazon de Torta is a torta-and-taco truck built around what chef Jose "Joe" Rodrigo Figueroa Sanchez and owner Antonio "Tony" Ley describe as Mexican grandmother-style cooking, according to the Culinary Institute of America's ProChef profile. The truck first parked in the lot of a muffler shop in San Diego's Sherman Heights neighborhood in 2017 and built a following there, per the same source. It has since become known for a braised short-rib taco finished in guajillo chile sauce, along with dishes such as a meatball torta with chipotle-tomato sauce and roasted-cauliflower mole tacos, and has found regular business at Chula Vista breweries, according to the San Diego Reader.
