Spanish Pavilion is a restaurant in Harrison, New Jersey that founder Antonio Fernandez opened decades before retiring and passing the business to his daughter Balbina and grandsons Michael and Jerry, according to Reality TV Updates' recap of the Season 4 premiere. By the time of Gordon Ramsay's late-2010 visit, Michael, the head chef, had grown less engaged in the kitchen, Jerry was focused on an outside role as a local elected official, and the restaurant carried roughly $550,000 in debt. Recap sources describe Ramsay finding a live pigeon flying through the kitchen and dead lobsters decomposing in the restaurant's display tank, a hazard given that live lobsters kept nearby could feed on the dead ones, while dishes including a lobster bisque, chicken and garlic, and paella arrived overcooked or excessively oily. For the relaunch, Ramsay introduced a tapas-focused menu alongside the restaurant's existing offerings and had the dining room refreshed with new china and furnishings; the reopening went well enough that the brothers were, per the recap, visibly pleased with the results.
