The business was founded by chef Crystal De Luna-Bogan, a Le Cordon Bleu-trained cook, and her husband Joseph, who moved the concept from Los Angeles to Nashville, according to a feature on shewholovesfoodandtravel.com. The truck later grew into a brick-and-mortar melt shop at 2003 Belcourt Avenue in Nashville's Hillsboro Village area, per the same feature. Yelp's business page for the restaurant, updated February 2026, showed 696 photos and 689 reviews logged at the Belcourt Avenue address, and Seamless separately listed the location as an active delivery option under the same address.
On Diners, Drive-Ins and Dives' "Food TruckAPalooza" (aired 2015-02-22), Guy Fieri visited The Grilled Cheeserie in Nashville for a pimento mac and cheese sandwich topped with bacon and tomato, dipped in a homemade roasted red pepper tomato soup, according to Food Network.
